Chickpea Salad Recipe | Chickpea Salad | Healthy Chickpea Salad

This beautiful Chickpea Salad combines all of my favorite fresh vegetables. This salad is filled with a huge variety of produce and contains so many wonderful, fresh ingredients. Refreshing cucumbers, juicy tomatoes, and crisp bell peppers are the perfect complement to chickpeas. This is the combination of beautiful colors. Filled with good things like chickpeas and crunchy veggies, it’s simple yet incredibly satisfying. Enjoy it as a light dinner, or grab it up for lunch without thinking about any other thing to replace it.

Ingredients:

  • 1 Bowl Chickpeas , Soaked Overnight & Boiled
  • 1/4 Cup Sliced Red Onion
  • 2 Cups Diced Tomatoes
  • 2 Cups Diced Cucumber
  • 1/2 Cup Fresh Coriander Leaves, Chopped
  • 1 Diced Red Bell Pepper
  • 1 Yellow Bell Pepper, Chopped
  • 1 Green Bell Pepper, Chopped
  • 1/3 Cup Pitted Olives
  • 9-10 Small Cubes Of Cottage Cheese

Dressing

  • 1/4 Cup Olive Oil
  • 1/2 Teaspoon Cumin Powder
  • 2 Tablespoons Freshly Squeezed Lemon Juice
  • 1 Teaspoon Dried Oregano
  • Freshly Ground Salt And Pepper, To Taste

Method: 

  1. Place chickpeas and all the cut veggies into a large bowl and toss to combine.
  2. Whisk together olive oil, lemon juice and oregano & cumin powder in a small bowl. Pour onto salad and gently toss to combine.
  3. Taste and add salt and pepper as you’d like.
  4. Refrigerate at least one hour before serving.
