How to Make Kathal ki Sabzi | Kathal Recipe | Jackfruit Curry | Kathal Sabji Recipe

Jackfruit dish is a spicy and delicious curry served as a main course dish with roti or rice. This vegetarian recipe is mostly popular in North India. The raw jackfruit is used to make this yummy curry. Follow these easy recipe to make it at home and trust me it will turn out very delicious.

Ingredients:

  • Half KG Kathal (Jackfruit, Unripe)
  • 2 – Onions, Big
  • 8-10 Garlic Cloves
  • 1 Inch Ginger
  • Oil For Frying, Mustard Or Any Of Your Choice
  • 1 Tsp – Chilli Powder
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp – Coriander Powder
  • 8-10 Black Papers
  • 4-5 Cloves
  • 1 Inch Cinnamon Stick
  • 1-2 Florets Of Star Anise
  • 2 Black Cardamom
  • 2 Green Cardamom
  • 1/2 Tea Spoon Cumin Seeds
  • 2 Cups Water
  • Salt To Taste

Method:

1. Oil your hands well before cutting the Jackfruit as its quite sticky. Keep some oil handy while cutting it, as you will need to oil your palms from time to time. Oil prevents hands from getting sticky and itchy.

2. Peel the Jackfruit and slice into pieces of desired thickness.

3. Slice rounds into halves, and remove any thick stem in the center, before cutting slices into smaller pieces. Now wash it properly and let it dry over a cotton cloth for sometime.

4. Heat the oil and fry the pieces over high heat, till light brown. Drain and set aside.

5. Now grind the Onion, garlic, ginger, black paper, black/green cardamom, cinnamon, star anise & cloves together in a large mixer jar & make a smooth paste.

6. Add cumin seeds to the same oil in the pan we fried the Jackfruit.

7. When the seeds begin to splutter, add the onions, garlic and ginger paste to the pan and fry till fat separates.

8. Add coriander powder, salt, chilli powder & turmeric. Stir to mix well.

9. Add the Jackfruit, stir a few times before adding about 2 cup of water. You can add water as per desired consistency of the curry.

10. Bring to a boil and simmer till the vegetable is cooked through.

11. Serve hot with the rice and wheat chapati.
